【摘要】:ThisInternationalStandarddescribesaprocedurefordeterminingwhetherthereexistsaperceptiblesensorydifferenceorasimilaritybetweensamplesoftwoproductsconcerningtheintensityofasensoryattribute.Thistestissometimesalsoreferredtoasadirectionaldifferencetestora2-AFCtest(AlternativeForcedChoice).Infact,thepairedcomparisontestisaforcedchoicetestbetweentwoalternatives.NOTEThepairedcomparisontestisthesimplestexistingclassificationtestsinceitconcernsonlytwosamples.Themethodisapplicablewhetheradifferenceexistsinasinglesensoryattributeorinseveral,whichmeansthatitenablesdeterminationofwhetherthereexistsaperceptibledifferenceconcerningagivenattribute,andthespecificationofthedirectionofdifference,butitdoesnotgiveanyindicationoftheextentofthatdifference.Theabsenceofdifferencefortheattributeunderstudydoesnotsignifythattheredoesnotexistanydifferencebetweenthetwoproducts.Thismethodisonlyapplicableiftheproductsarerelativelyhomogeneous.Themethodiseffectivea)fordetermining?whetheraperceptibledifferenceexists(paireddifferencetest),or?whethernoperceptibledifferenceexists(pairedsimilaritytest)when,forexample,modificationsaremadetoingredients,processing,packaging,handlingorstorageoperations,orb)forselecting,trainingandmonitoringassessors.Itisnecessarytoknow,priortocarryingoutthetest,whetherthetestisaone-sidedtest(thetestsupervisorknowsapriorithedirectionofthedifference,andthealternativehypothesiscorrespondstotheexistenceofadifferenceintheexpecteddirection)oratwo-sidedtest(thetestsupervisordoesnothaveanyaprioriknowledgeconcerningthedirectionofthedifference,andthealternativehypothesiscorrespondstotheexistenceofadifferenceinonedirectionortheother).
